Sweet Potato Gratin

Ingredients:
4 - medium sweet potatoes, washed, unpeeled
1 tsp - salt
1/2 cup - butter
1/2 cup - Florida Crystals® Certified Organic Sugar
1 Tbsp - grated orange peel
Juice of 1 orange
1 tsp - grated lemon peel
Juice of 1 lemon
1/8 tsp - ground cinnamon
1/8 tsp - ground white pepper
1/4 cup - Florida Crystals® Certified Organic Sugar to sprinkle on top

Preparation:
Preheat oven to 375 degrees. Place sweet potatoes and salt in a 4-quart saucepan. Add water to cover. Bring water to a boil then reduce to a slow simmer, covered for 30 minutes or until fork is tender. Drain and cool slightly.
Peel the sweet potatoes and place in large bowl. With a mixer on low speed, beat potatoes, butter, 1/2 cup Florida Crystals® Certified Organic Sugar, juices, grated peel, cinnamon and pepper until light and fluffy.
Spoon into a buttered 2-quart casserole. Sprinkle top with remaining sugar. Bake for 15 minutes or until top is golden brown.
