Light Tiramisu

1 - (8 oz.) pkg. cream cheese, room temperature
1/4 cup - Florida Crystals® Organic Powdered Sugar
1/4 cup - 1% milk
1/2 Tablespoon - vanilla extract
1 Tablespoon - cocoa powder, sifted
5 - large egg whites, room temperature
1/4 cup plus 1 Tablespoon- Florida Crystals® Organic Granulated Sugar
1 cup - espresso (or very strong coffee)
12 - store-bought Lady Finger cookies
1/2 pint - fresh raspberries

Place cream cheese and powdered sugar into a mixing bowl and cream together until fluffy. Slowly add milk and vanilla extract. Divide batter in half and add cocoa powder to one half.

With an electric mixer, beat egg whites on high speed until soft peaks form. Slowly add the 1/4 cup of granulated sugar and continue beating until firm peak stage is reached. Do not over beat! Gently fold half of this meringue into the chocolate mixture, adding half into vanilla mixture.

Stir the tablespoon of granulated sugar into the espresso or strong coffee. Place the Lady Fingers in the coffee to make moist.

Spoon the chocolate mixture into the wine glasses. Top with two Lady Fingers and raspberries. Top this with vanilla mixture. Lightly dust with cocoa powder. Garnish with chocolate shavings.
