Grilled Spice Crusted Steak

Herbed Lemon Butter:
4 Tbsp - butter, softened
1 Tbsp - chopped fresh parsley
1 Tbsp - fresh lemon juice
¼ tsp - granulated garlic

Spice Crust:
¼ cup - ground black pepper
1½ tsp - ground white pepper
½ tsp - red pepper flakes
1 tsp - ground coriander
¼ cup - Florida Crystals® Certified Organic Sugar
1 Tbsp - salt
1 tsp - granulated garlic
4 sirloin or tenderloin steaks, or 1 flank steak

In a small bowl, mix the softened butter, parsley, lemon juice and garlic. Roll in plastic wrap into a log shape. Refrigerate until firm.

In a small bowl mix together the black pepper, white pepper, red pepper flakes, coriander, Florida Crystals® Certified Organic Sugar, salt and granulated garlic. Rub this spice mixture onto both sides of each steak. Shake off excess rub. Place steaks on hot grill and cook for 2 minutes. Turn and cook for an additional 2 minutes. Transfer steak to a cooler section of the grill and continue to cook until desired doneness. Serve each steak with a slice of Herbed Lemon Butter.

Quick Tip:
As the steak cooks, the sugar melts, mixes with the spices, and caramelizes to create a crunchy crust that is both sweet and spicy. The Lemon Butter mellows out the peppery flavor.
