Ingredients:
3 cups - Florida Crystals® 1001 Cookie Mix
2 - eggs
1 tablespoon - lemon rind
1 cup - shredded coconut
3/4 cup - finely chopped pecans or walnuts
1/4 cup each - finely chopped red and green candied cherries
Florida Crystals® Organic Cane Sugar


Preparation:
Preheat oven to 350°F. Generously grease a 13x9x2-inch baking pan.

In large bowl, mix together cookie mix, eggs and lemon rind. Stir in coconut, pecans and cherries.

Spread in prepared baking pan. Bake 20-25 minutes. When done, center should spring back when pressed lightly. While warm, cut into 1-1/2" squares. Sprinkle with Florida Crystals® Organic Cane Sugar.

Makes 48 squares.







Quick Tip:
If desired, use 1/2 cup of either red or green cherries instead of 1/4 cup of each.
