Curried Chicken with Rice

1 cup - Florida Crystals® White or Sem-Chi® Basmati Rice
3 - medium chicken breast halves
1 Tbsp - hot curry powder
½ tsp - Florida Crystals® Natural Cane Sugar
¼ tsp - salt
1 Tbsp - vegetable oil
1 - medium onion, chopped
¾ cup - chicken broth (fresh or canned)
1/3 cup - golden raisins
1 - Granny Smith apple, diced
8 ounces - plain yogurt (unsweetened)
2 Tbsp - flour

Prepare Florida Crystals® White or Sem-Chi® Basmati Rice as label directs; keep warm.

Meanwhile cut each chicken breast half into 8 pieces. In a small bowl, mix the curry powder, Florida Crystals® Natural Cane Sugar and salt.

In a skillet, heat the oil. Add the onions and cook until golden brown, stirring often. Add the chicken pieces and spice mixture and cook, stirring often, until chicken is cooked, about 3 to 5 minutes.

Stir in the chicken broth, raisins and apples. Heat to boiling, then reduce to a simmer.

In small bowl, mix yogurt with flour until well blended. Slowly stir this mixture into the liquid in the skillet, stirring constantly until heated through. Do not boil the mixture once the yogurt has been added. Serve over rice.

Serving Quantity: 3 to 4

Quick Tip:
For a more mild curry flavor, use regular curry powder. To increase the “Heat”, add a little hot pepper sauce.
