Oatmeal Cranberry Cookies

2 cups - butter
2 cups - Florida Crystals® Organic Cane Sugar
3 - eggs
2 1/2 teaspoons - vanilla extract
1/4 cup - whole wheat flour
2 cups - unbleached pastry flour
1 teaspoon - baking soda
1 teaspoon - salt
2 cups - dry rolled oats
3/4 cup - chopped walnuts
1 cup - dried cranberries

Preheat oven to 350°F (175° C).

Blend butter and sugar until fluffy. Add eggs and vanilla and mix well.

In a separate bowl, sift flour, baking soda, and salt together. Stir into butter mixture until well mixed. Stir in the oats. Fold in nuts and cranberries.

Place dollops on cookie sheet, and keep them far apart (this cookie spreads). Bake until they fall back down (8 to 10 minutes). Cool and enjoy.

A twist on the oatmeal-nut cookie, dried cranberries give them an extra layer of flavor.
