Sweet Potato Gratin

2 tablespoons - butter or margarine
2 - leeks, trimmed, washed and sliced
2 cups - heavy cream
2 tablespoons - firmly packed Florida Crystals® Organic Brown Sugar
1/2 teaspoon - nutmeg
1 teaspoon - salt
1/2 teaspoon - black pepper
2 pounds - red-skinned sweet potatoes, peeled and thinly sliced
1/2 cup - grated Swiss cheese

Preheat oven to 350┬░F. Lightly grease a 7x11-inch gratin dish.

In medium saucepan, melt butter over low heat. Add leeks and cook over low heat for 5 minutes. Whisk in the heavy cream, brown sugar, nutmeg, salt and pepper and simmer for 5 minutes. Add potatoes and bring to boil. Transfer mixture to gratin dish. Sprinkle with cheese. Bake for 50-60 minutes or until potatoes are tender. Cool slightly and serve.

Makes 8 servings.
