Agave Berry Breakfast Syrup

3 cups - fresh strawberries (hulled, cleaned and quartered)
2/3 cup - Florida Crystals® Organic Light Agave Nectar
additional fresh strawberries, hulled and sliced (optional garnish)

Place cut strawberries in a large microwave-safe bowl. Cook for 2 minutes, stirring after 1.

While the berries are cooking, pour the agave nectar into a small saucepan on low heat. Add strawberries to saucepan and crush, using a potato masher or ladle. Increase heat to medium, until mixture begins to boil and foam, approximately 5 to 7 minutes. Reduce heat and simmer for 10 minutes. Strain mixture using a mesh strainer, working with the back of a spoon to remove as much liquid as possible.

Serve over pancakes, waffles or French toast and enjoy!

Yields 1 cup.

Serving Quantity: Yields 1 cup.

Quick Tip:
You can use frozen strawberries as well, just make sure they are defrosted, and decrease amount from 3 to 2 1/2 cups.
