Raspberry Poached Pears
- 1 1/2 cups Florida Crystals® Organic Raw Cane Sugar
- 4 cups cold water
- 2 (12 ounce) packages frozen raspberries without syrup, thawed, puréed and strained
- 2 tablespoons cassis syrup or other fruit syrup
- 6 firm, ripe Bosc pears
- 1 tablespoon fresh lemon juice
Bring sugar and cold water to a boil in large non-aluminum saucepan. Simmer until sugar dissolves. Add puréed raspberries and cassis; stir to combine.
Peel pears and cut a thin slice from bottom so that pears stand upright. Gently lower pears into syrup. Simmer until tender, about 30 minutes or until pears are tender when pierced with a knife.
Occasionally spin pears so that they color evenly.
Cool to room temperature then chill several hours or overnight in syrup.
To serve, transfer 2 cups of syrup to medium bowl. Stir in lemon juice. Serve pears at room temperature or chilled with raspberry syrup.
