Gluten-Free Key Lime Pie

Ingredients


For the crust

  • 8 tablespoons Unsalted butter, melted
  • 5 cups Corn flakes  
  • 1/3 cup Almonds, sliced
  • 3 tablespoons Florida Crystals® Regenerative Organic Raw Cane Sugar
  • ¼ teaspoon Salt 

For the filling and topping

  • 2 (14 oz) cans Sweetened condensed milk 
  • 1 cup Freshly squeezed key lime juice
  • 2 large Egg yolks
  • 1 teaspoon Lime zest
  • 1 ½ cups Heavy whipping cream, cold
  • 3 tablespoons Florida Crystals® Regenerative Organic Powdered Sugar
  • ½ teaspoon Pure vanilla extract
  • Key lime slices, as garnish
  • 1/3 cup Toasted sliced almonds, as garnish

Instructions

Step 1

Preheat oven to 325°F. Grease one 9-inch pie dish with butter.

Step 2

Using a food processor, pulse the corn flakes and almonds until fine crumbs. Transfer to a large bowl and mix with sugar, salt, and melted butter. Press the mixture onto a 9-inch pie plate. Make sure the mixture is even throughout the pie plate. Bake in the oven for 15 minutes. Remove from the oven and set aside.

Step 3

In a large bowl mix sweetened condensed milk, key lime juice, egg yolks, and lime zest. Pour the mixture into the baked crust. Bake for 15 minutes. Remove from the oven and allow the pie to cool completely. Place in the refrigerator for at least 1 hour.

Step 4

Before serving, prepare the whipped cream. Beat cream, sugar, and vanilla at high speed until medium to stiff peaks. Place cream in a pastry bag fitted with a star tip. Decorate pie with cream, lime slices and almonds. Serve.
