For the crust

  • 1 ½ cups Graham cracker crumbs
  • 6 tablespoons Unsalted butter, melted
  • 2 tablespoons Florida Crystals® Regenerative Organic Light Brown Sugar
  • pinch Salt 

For the chocolate cake

  • 8 tablespoons Unsalted butter
  • 4 ounces Unsweetened chocolate (100% cacao), chopped
  • 1 ¼ cup Florida Crystals® Regenerative Organic Light Brown Sugar
  • 1 ½ teaspoons Pure vanilla extract
  • ¼ teaspoon Salt 
  • 2 large Eggs, at room temperature
  • ½ cup All-purpose flour

For the meringue

  • 4 large Egg whites, at room temperature
  • 1 cup Florida Crystals® Regenerative Organic Raw Cane Sugar
  • 1 teaspoon Pure vanilla extract


Step 1

Preheat oven to 350°F. Grease one 12-cup mini cheesecake pan. In a medium bowl, mix all the ingredients for the crust until well combined. Add 2 tablespoons of mixture to each cup and firmly press down the crust. Bake for 8 minutes. Remove from the oven. Set aside.

Step 2

To prepare the cake filling while the crust is in the oven, put the butter and the chocolate in a medium heat-proof bowl. Set the bowl over a saucepan with about 2 inches of simmering water. Stir occasionally until the butter and chocolate are melted. Take off the heat and whisk in the sugar, vanilla, and salt. Stir in the eggs until well mixed. Stir in the flour until just mixed. Put the batter in a pastry bag and fill the cups. Bake for 18-20 minutes in the oven until firm but not dry. Remove from oven, allow to cool to room temperature.

Step 3

When ready to serve, combine egg whites and sugar in a medium heat proof bowl. Set the bowl over a saucepan with simmering water. Whisk the mixture constantly until the sugar has completely dissolved and the mixture reaches 160°F. Remove from heat. Using a handheld mixer beat on high speed until the mixture forms glossy, stiff peaks and has cooled down. About 8-10 minutes. Add the vanilla extract and whip until combined. Add the meringue to a piping bag fitted with a star tip and decorate each mini cake.

Step 4

Preheat the broiler of your oven. Place the Mini S’more’s Bites on a baking sheet. Place in the oven and broil the meringue for 1-2 minutes. Don’t walk away as this process is quick, rotate the pan if needed. If available, use a kitchen torch to achieve the same results.
