Ingredients


  • 6 tablespoons Unsalted butter, at room temperature
  • ½ cup plus 2 tablespoons, divided Florida Crystals® Regenerative Organic Raw Cane Sugar
  • 1 large Egg, at room temperature
  • ¼ teaspoon Pure vanilla extract
  • 1 cup All-purpose flour
  • 1 teaspoon Baking Powder
  • pinch Salt 
  • 2 teaspoons Ground cinnamon

Instructions

Step 1

Preheat oven to 350°F. Line one baking sheet with parchment paper.

Step 2

In a medium bowl, beat butter and ½ cup of sugar until light and fluffy, about 2 minutes. Add egg and vanilla and beat until well combined. Scrape the sides of the bowl as needed.

Step 3

In a small bowl, whisk together flour, baking powder, and salt. Add flour mixture to butter mixture. Beat until just combined.

Step 4

In a small bowl, combine the remaining 2 tablespoons of sugar and cinnamon. Using a small ice cream scoop, scoop dough. Roll dough with your hands to form a ball and then roll it in the sugar-cinnamon mixture. Place the ball on the prepared baking sheet. Repeat the process with the rest of the dough.

Step 5

Bake for 10-12 minutes or until golden brown around the edges. Allow the cookies to cool in the pan for 5 minutes, and then transfer to a cooling rack.

Chef's Tip

The recipe can be doubled for a bigger batch of cookies.
