Meet The Chef: Mallory Onisku

Ingredients
- 1 14oz can Sweetened condensed coconut milk
- ½ cup vegan butter
- ¾ cup Florida Crystals® Regenerative Organic Light Brown Sugar
- ¼ cup Florida Crystals® Regenerative Organic Raw Cane Sugar
- 3 tbsp applesauce
- 1 tsp vanilla
- 1 ½ cups all-purpose flour (195 grams)
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 cup vegan chocolate chunks
- ½ cup crushed candy canes
Instructions
Step 1
Preheat the oven to 350°F.
Step 2
Add vegan butter, Florida Crystals® Regenerative Organic Light Brown Raw Cane Sugar, and Florida Crystals® Regenerative Organic Raw Cane Sugar to a bowl. Mix (using a stand mixer or hand mixer) for 3-4 minutes until butter and sugars are totally incorporated. Add applesauce and vanilla. Mix until combined.
Step 3
Add all-purpose flour, baking soda, baking powder, and salt. Mix until the flour is just incorporated. Add vegan chocolate chunks and crushed candy canes. Mix until evenly distributed throughout the dough.
Step 4
Use a 2 tbsp cookie scoop to scoop out the dough onto a lined baking sheet. Put a couple extra chunks of chocolate and candy cane on top of each dough ball (optional). Transfer to the oven and bake for 7-9 minutes, until the edges are just starting to brown. Let the cookies cool for 15 minutes on the baking sheet. Enjoy!
