Ingredients


For the ladyfingers

  • 2 cups Cake flour
  • 1 teaspoon Baking powder
  • ¼ teaspoon Salt 
  • ¾ cup Aquafaba 
  • ¾ cup Florida Crystals® Regenerative Organic Raw Cane
  • 1 ½ teaspoons Pure vanilla extract
  • 2 tablespoons Vegetable oil of choice
  • 2 tablespoons Florida Crystals® Regenerative Organic Powdered Sugar

For the cream and assembly

  • 8 ounces Plant based cream cheese of choice, at room temperature
  • ¾ cup Florida Crystals® Regenerative Organic Powdered Sugar, sifted
  • pinch Salt 
  • 1 ½ tablespoons Marsala wine
  • 2 teaspoons Pure vanilla extract
  • ½ cup Plant based heavy whipping cream
  • 1 cup Freshly brewed espresso
  • ½ cup Cocoa powder

Instructions

Prepare the ladyfingers

Step 1

Preheat oven to 350°F. Line two baking sheets with parchment paper.

Step 2

In a medium bowl, whisk together flour, baking powder, and salt.

Step 3

In a large bowl, at medium-high speed, beat the aquafaba until stiff peaks form. Slowly add the sugar and beat until glossy and the mixture falls in ribbons. Reduce the speed and add vanilla and oil. Fold in flour mixture until just combined. Allow the mixture to rest for 10 minutes.

Step 4

Transfer mixture into a pastry bag fitted with a large round tip. Pipe the dough into 4-inch long logs. Dust with powdered sugar.

Step 5

Bake for 15 minutes. Remove from oven and cool on the pan for 5 minutes. Transfer to a cooling rack to cool completely.

Prepare the cream

Step 6

In a large bowl beat cream cheese, at medium speed, until smooth and creamy. Add sugar and salt, beat until well incorporated. Scrape the sides of the bowl. Add Marsala wine and vanilla, beat until well combined. Add the cream and whip until light and fluffy.

Assemble

Step 7

Pour the espresso in a shallow dish. Cut the ladyfingers in halves or thirds to accommodate the desired cup. Dip the ladyfingers in espresso. Arrange in a single layer on the bottom of each cup (6-ounce capacity). Add the cream on top. Dust with cocoa powder. Repeat process two more times.

Step 8

Refrigerate for at least 2 hours. Serve.

Additional Tips

Marsala wine can be substituted with rum or espresso coffee for a stronger coffee flavor.

You may use store-bought ladyfingers for a quick dessert.
